Zucchini Fettuccine with Fresh Tomato, Red Bell Pepper & Basil Sauce

Spiralized vegetables are all the rage. Try this yummy zucchini fettuccine dish in a fresh tomatoes, red bell pepper and basil sauce. Delicious!
  • 2 large zucchini
  • 1 red bell pepper
  • 3 fresh tomatoes, diced
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 3 Tbsp basil, chopped
  • 1/2 tsp red pepper flakes
  • 1/2 tsp salt or to taste
  1. Begin by prepping your vegetables. Wash the zucchini, bell pepper and tomatoes. Cut off the ends of each zucchini and cut in to 3 inch sections. Use a spiralizing tool with the blade attachment that cuts each section of zucchini into long ribbons like fettuccine. Continue prepping the vegetables – cut the red bell pepper in to strips and dice the tomatoes. Set all the vegetables aside. Add 1/4 cup of olive oil to a deep skillet and heat. Add the minced garlic and red bell pepper strips. Saute for several minutes on medium heat. Add the diced tomatoes and season with salt and red pepper flakes. Continue cooking on medium heat until peppers and tomatoes are cooked through and tender. Toss in the zucchini fettuccine ribbons and the chopped basil. Cook a couple of minutes until the zucchini is tender. It’s ready to serve!
