Tuscan Bean, Kale and Lean Turkey Sausage Soup

Healthy Tuscan bean, kale, and lean turkey sausage soup in the slow cooker…perfect for those cold days when you want to put minimal effort into making a meal.  I highly recommend you try this recipe on a cold and lazy Sunday afternoon.

Ensure you purchase lean turkey sausage (no casing) to keep the fat content down.  Also, use low sodium chicken broth and canned beans to reduce the sodium. You may go a step further and rinse your beans very well to remove even more.  Prep time is minimal. You’ll have the soup ingredients in the slow cooker within 15 minutes. Set it and forget it!

Tuscan Bean, Kale & Turkey Sausage Soup

Healthy Tuscan white bean, kale and turkey sausage soup made in a slow cooker!! Perfect for those cold lazy days!
Ingredients
  • 1 lb mild turkey sausage, no casing
  • 15.8 oz or 1 can white northern beans
  • 4 cups raw kale, chopped
  • 64 fluid oz. chicken broth low sodium low fat
  • 1 small can tomato paste
  • 1 cup diced carrots
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 4-5 cloves garlic minced
  • 1 tsp dry sage
  • 1/2 tsp black pepper
Instructions
  1. Sauté turkey sausage until not pink anymore. Place all the ingredients into slow cooker and cook at high temperature for 4 hours. Then serve.
