Smashed Garlic Parsley Potatoes 😋🤤 …. sooo good and and the perfect side for a regular carb day or even a great appetizer (bite sized finger food)

Here’s how to make them…

-10-15 small Yukon gold (or other type of potatoes) ~approx 1-2 inch in diameter. You can usually get a small bag of these mini size potatoes at your grocery store
-1/4 cup of olive oil (or melted ghee/butter)
-2 large cloves of garlic, minced
-1/4 cup chopped Italian Parsley
And Salt to season

Cooking Instructions:
Wash the potatoes thoroughly. Cook potatoes in boiling water until fork tender. Drain and set aside.
Combine the rest of the ingredients in a bowl to make your marinade topping for the potatoes. Preheat oven to 400 degrees.

Place cooked potatoes on a baking sheet. Using something flat (like bottom of a glass) push down/flatten each potato. Drizzle the garlic parsley marinade on top of each potato. Then season each one with a little salt. I like to use the flaky salt for this.

Bake in the oven for 15-25 minutes or until the potatoes start to get golden. You may need to put the oven on broil for a couple of minutes at the end if you want them crispier.
