A light, fresh salsa. It’s great served with grilled chicken
Ingredients
- 1- 2 cucumbers, diced
- 1 jalapeno, diced
- 1/2 red onion, diced
- 1-2 tsp extra virgin olive oil
- 1-2 tsp rice vinegar
- dash of salsa
Instructions
- Dice cucumber, jalapeño and red onion into small pieces. Toss with the extra virgin olive oil and rice vinegar. Serve with grilled chicken or in a fish taco.
