A light, fresh salsa. It’s great served with grilled chicken
  • 1- 2 cucumbers, diced
  • 1 jalapeno, diced
  • 1/2 red onion, diced
  • 1-2 tsp extra virgin olive oil
  • 1-2 tsp rice vinegar
  • dash of salsa
  1. Dice cucumber, jalapeño and red onion into small pieces. Toss with the extra virgin olive oil and rice vinegar. Serve with grilled chicken or in a fish taco.
